Rose Pistachio Cooler

Recipes    |    Posted By Jenny Griffith

I love rose. Especially in the summertime! Rose is cooling, beautiful to look at, romantic, and smells heavenly. I especially love the fact that it has so many medicinal benefits on an Ayurvedic standpoint. I've been wanting to make a unique and beautiful rose drink for the summertime so here it is!

Rose Benefits:

Balances our pitta dosha (fire element)

Soothes emotional issues of the heart

Tonifies skin and digestive tract

Cooling anti-inflammatory effect

Summer is the perfect time to start adding rose into your routine!

Rose Pistachio Cooling Drink

  • 8-10 threads of saffron
  • 1 tsp of cardamom powder
  • 1/2 cup of pistachios
  • 2 tbsp of honey/maple syrup/ or stevia depending on your dosha
  • 3 cups of water
  • 1 pinch of himalayan rock salt
  • 3 Tbsp of rose water

1. Boil 3 cups of water. Turn off heat and add saffron and cardamom. Let cool.

2. Add pistachios to water and let everything sit overnight.

3. Add the water mixture and the rest of ingredients in a blender and blend.

4. Pour in a pretty wine glass and garnish with dried rose petals, saffron, and cardamom.

5. Enjoy :)
